If the pumpkins aren't too big; I ...Great Post! If the pumpkins aren't too big; I just poke them with a knife and bake like a squash. Then quarter it, gut it and peel the hide off. Then toss the meat of it in the food processor, place in quart size freezer bags and lie them flat for easy storage in the freezer. Works great.
